  1. You’ll need some Spicy Chive Aioli. Recipe is in the notes below.
  2. Allow your steak to come to room temp. Coat with canola oil, salt and pepper.
  3. Sear the steak off on a pan or skillet set over medium-high heat. (1 minute each side for rare, 2 minutes for medium rare and 3 minutes for Medium). This applies to a 1 inch steak.
Cheddar Chive Eggs
  1. Melt butter over low-medium heat. Add in the eggs and stir.
  2. Continue to stir until your eggs are almost set. Add in the sour cream (see link below for more options). Salt to taste.
  3. Take the eggs off the heat and mix in the cheese.
  4. Mix in the chives.
  5. Plate, ground some black pepper and serve.

I suggest you make the eggs in two batches. It is way easier to work with.
