Cheesy Chorizo Egg In A Cloud

Instructions
  1. Preheat the oven to 450F
  2. Separate the eggs.
  3. In a pan over medium heat, cook the chorizo in a tsp of olive oil.
  4. Remove from heat and remove the fat from the pan. Allow the chorizo to cool completely.
  5. Beat the eggs whites until stiff peaks form.
  6. FOLD (not mix) in the cheddar cheese, chorizo and chives chives.
  7. Spoon the mixture into four mounds on a sheet of greased parchment or aluminum paper.
  8. Bake for 4 minutes, remove from the oven and make wells into each of the mounds.
  9. Add the yolks in the center and bake for another 3 minutes.

It’s important to note that the flavors are great but the texture is “different.” It’s soft and springy. This is just a heads up if you are not into that kind of stuff. 😀
