Roasted Red Curry Spiced Nuts

This bowl of spiced nuts were apart of my submission to IL Desco’s Italian Dinner Competition.

Nuts…hehe, call me immature but I chuckle at that word. Yeah…I need to grow up.

When I researched Italian cuisine, I discovered that Italians are quite fond of nuts and have roughly the same amount of nut trees as they do olive trees. Who knew? The local and favored nuts are pine, walnuts and almonds. I found that pine nuts would be too small and walnuts too large for this recipe. I used cashews and pecans instead. Which ones you want to use is ultimately up to you…you are the boss of your nuts…hehe.

I first tried curried nuts at my local health food store. Yes, I’m that guy that goes around the bulk foods section “sampling” everything. Am I embarrassed doing so? Yeah, I am. Am I embarrassed enough to not “sample” the whole chocolate covered isle? Um…no! I will continue to “try” the moose track popcorn every time I visit until that “feel free to sample” sign is taken down. It might be growing up in poverty, the constant yo-yo dieting or the sugar high I get from each bite…but free and delicious is a hard combination to pass up.

Sorry, I don’t know where I was going with that. Ok, roasted red curry spiced nuts are these little flavor bombs that can be explained like this.

A sweet, spicy, nutty aroma hits you..

You notice the golden nuts glistening…

You unassumingly pick one up…

You put it in your mouth…

The herbaceously spicy flavor is felt…

The sweetness follows…

The flavor of the nut follows that…

You swallow…then…

Repeat until the nuts are gone.

 

This is what happened to me. Try it and see how you do. Is your self control able to keep you from these nuts?…Hehe.

Instructions
  1. Mix all the ingredients together (excluding the nuts).
  2. Mix in the nuts.
  3. Bake at 350F for 13-15 minutes. Give it a little mix half way through.
