Caramelized Onions
  1. In a large pan set over medium heat, melt the unsalted butter with the olive oil. Throw in the onions and a large pinch of salt (about 1 tsp). Saute for 3 minutes.
  2. Drop the heat down to low and add in the balsamic vinegar. Cook for 20-25 minutes. Be sure to give this a stir every 5 minutes. Check for seasoning and set aside.
Chive Panko Crumb
  1. In a pan set over medium heat, melt the unsalted butter.
  2. Add in the panko and stir until the crumbs are golden brown 3-5 minutes. Salt and pepper to taste and mix in the chopped chives. Set aside.
Rosemary Burger Patty
  1. Mix the ground beef, chopped rosemary, garlic powder, salt and pepper together. Stop as soon as it is mixed, you don’t want to over mix here.
  2. Form the patties into four 8 oz patties (1 inch thick) and make a small indent in the middle of each patty (this prevents the patty from bulging up in the middle).
  3. Heat your grill pan or any heavy bottom pan to medium-high. Grease with the canola oil.
  4. Give your patties a light pinch of salt and pepper. Throw them on the grill.
  5. Smile at the sound of the sizzle (this step is optional but highly recommended).
  6. Flip and finish cooking (see notes for cooking times). Add the cheese one minute prior to finishing.
  7. Throw the bread on the grill, cover and finish cooking for the last minute. This will not work in a pan (it will burn, see notes for alternatives).
Assembly
  1. Allow the patties to rest for 5 minutes on a plate.
  2. Build the burger and serve!
Recipe Notes

For a medium-rare burger, you will cook each side for 3 minutes and for a medium burger, you will need 4 minutes).

Example for medium rare burger: Add patty to pan, cook for 3 minutes, flip, cook for 2 minutes, add cheese, cover and cook for 1 minutes.

To toast bread, melt enough butter to coat the pan over low-medium heat. Place the bread in and cook for 2-3 minutes.
