Thai Cucumber Salad

This Thai cucumber salad was apart of my submission to IL Desco’s Italian Dinner Competition.

I am sorry to inform you, my dear reader, that this is a no frills recipe. Nothing extravagant. Nothing extraordinary. Nothing…new.

Wait!!! Don’t click away just yet! This recipe is still refreshingly delicious! You may have seen this dish before. I’m almost certain you did. I bet my left pinky finger that you have seen at least one of these links here, here or here. Now, I’m not saying that mine is better. Nope, I don’t have the testicular fortitude to back that up. I am just presenting you with my version. I made it by throwing stuff together until I liked the flavor. How’s that for brutal honesty?

So on the off chance that you have never stumbled upon a Thai cucumber salad recipe. It is a salad…that is made with cucumbers…that is Thai inspired. Hehe, I told you this is nothing extraordinary. More of a pickle than anything else. This salad is crisp, fragrant, sweet and sour. The best part…no oil, no fat (excluding the roasted peanuts). No, I’m not a healthy freak…if you saw the rest of the menu for the competition, you’d understand why this salad was necessary.

Instructions
  1. Thinly slice the shallots and place them in Ice water (at least 15 minutes).
  2. Peel and slice the cucumbers to your desired size. the thinner the slice the stronger the flavor will be with the salad dressing.
  3. Mix the rice vinegar, sugar, fish sauce, salt, until everything has dissolved. Then mix in the cucumbers, shallots and cilantro. Top with roasted peanuts if you wish.
