Orange Arugula Salad

Another salad recipe? YES! I will continue to do salad recipes until my pants fit me again.

Don’t worry my fellow sugar lovers, this Orange Arugula Salad is just like eating dessert but without the regret. Two fruits, two veggies and three healthy sources of fat. It’s like natures multi-vitamin!

This salad has everything! Citrus-y burst from the oranges, tartness from the pomegranate, a touch of saltiness from the pistachios, savory creaminess from the feta and balanced by the slight bitterness of the arugula. Hmm, I feel like I just wasted your time…you can obviously see the picture. You didn’t need me to tell you. It’s simple and very basic. So basic…I’m not even going to include a real recipe.

I have included the ingredients that I used but the amount that you want is entirely up to you! I do this for a few reasons.

  1. We are not baking! This isn’t a science! This is delicious food in its simplest form!
  2. I don’t want my viewers to feel restricted my the boundaries that I set in recipes! I want you guys to take ideas from me and make them your own.
  3. This dish wasn’t destined to be placed on the blog…which means I didn’t meticulously measure out the ingredients used to birth this beautiful food baby. Luckily measurements don’t matter for this one…phew!

You really only need the arugula salad and orange to make this amazing dish. That’s why the title is “Orange Arugula Salad.” If you want to take it to the next level then please make what this dish was meant to be…

Orange Arugula Salad with sliced red onions and feta sprinkled with pomegranate seeds and crushed pistachios!…Wow, that was a mouthful. A delicious mouthful *Da Dum Tsch*.

Instructions
  1. Mix the balsamic, extra-virgin olive oil and salt together. Then toss it with the arugula.
  2. Top with what ever your heart desires.

Red Onions need to be sliced and soaked in ice water for at least 15 minutes to take the "rawness" away.

Pistachios: I highly recommend getting the ones that are still in the shell. They taste a lot better.
