Have you ever heard of the phrase “Cloud Nine?”
This phrase means a state of extreme happiness. So it can be used for situations like…
- A warm embrace between two lovers.
- Your first bite of food after a long fast.
- This Cheesy Chorizo Egg In A Cloud.
Seriously, the Cheesy Chorizo Egg In A Cloud is the symbol of Cloud Nine.
Going back to my first point, this is the warmest of embraces between lovers…cheese and eggs (I added chorizo because this third party adds some much needed spice to the relationship…you can interpret that however you want ;D). Second point, this is the ideal way to start your day! It’s light, fluffy and filling all at the same time…it’s hard to explain, you just have to give it a go. Now my final and most compelling piece of evidence that irrefutably proves that this is symbolic of Cloud Nine is…the fact that it looks like a cloud (yes, a red cloud…but a cloud none the less). I rest my case!
Ok, ok, ok…cloud nine is just a saying. This however, is real. An egg yolk, nestled in the center of an egg white nest that has been infused with spicy Mexican chorizo and melted cheese. Not convinced that this is worth your time? Well, check this out…
Oh…yeah. Look at that yolk! Need I say more? If I haven’t convinced you to make these by now then I don’t think I can.
I obviously won’t get a plane ticket, travel to where you are and make these in your kitchen. Hmm, actually…I will, assuming you provide travel expenses, food cost and proof that you are not a murderer. I’m serious and totally up for it! If you are unwilling to have some random Asian guy cooking eggs at your house then I suggest you spend the $5 and try it out for yourself. Good luck and let me know how it goes!
- 4 large Eggs Seperated
- 3 oz Mexican Chorizo
- 1 oz Shredded Cheddar Cheese
- 2 tbsp Chives Chopped
- 1 tsp Olive Oil
- Salt To taste
- Grounded Black Pepper To taste
- Chives Optional
- Cherry Tomatoes Optional
- Preheat the oven to 450F
- Separate the eggs.
- In a pan over medium heat, cook the chorizo in a tsp of olive oil.
- Remove from heat and remove the fat from the pan. Allow the chorizo to cool completely.
- Beat the eggs whites until stiff peaks form.
- FOLD (not mix) in the cheddar cheese, chorizo and chives chives.
- Spoon the mixture into four mounds on a sheet of greased parchment or aluminum paper.
- Bake for 4 minutes, remove from the oven and make wells into each of the mounds.
- Add the yolks in the center and bake for another 3 minutes.

It's important to note that the flavors are great but the texture is "different." It's soft and springy. This is just a heads up if you are not into that kind of stuff. 😀
