Rupert Holmes wrote a song about infidelity and that was shadowed by the sheer awesomeness that is the Piña Colada. Did you even know that that was what the song was about?
This is my way to mend that pain and fill the void. I was playing with cool whip and pudding mix not too long ago for The Grey Stuff and decided to do the same here but with the flavors of a Piña Colada. I’m not one to toot my own horn…but TOOT TOOT!!! This deliciousness was born! It’s sweet, chewy, crunchy, mildly tart and oh so seductively creamy!
Join me in making this tropical treat. It’s insultingly easy to make. All of the ingredients are found in the baking isle of your local grocery store (excluding the cook whip). That is found in the frozen Isle. This Piña Colada Parfait will take you no more than 5 minutes to make*. Seriously. Go and cheat on your routine choice of parfait with this stunning beauty**.
*You do have to wait a grueling 2-3 hours before eating though. Sigh.
**Here at feedingthefiya, we do not support cheating on your partner. Food, yes. Partner, definitely not. If in the event that your partner doesn’t like Piña Coladas then it is understandable. Not supported. Just understandable.
- 1 box Instant Coconut Cream Pudding Mix 3.4 oz
- 1 can 20 oz Canned Pineapple in 100% Juice
- 1 cup Mini Marshmallows (50 grams)
- 1/2 cup Cool Whip Plus more for garnish
- 1/4 cup Sliced Almonds Plus more for garnish
- 1/8 cup Sweetened Coconut Flakes Optional
- In a large bowl, Mix everything together (excluding the cool whip). If you are going to add Sweetened Coconut Flakes then start with 1/2 oz and taste for texture. Too many can make your parfait too chewy.
- Then fold in the cool whip and chill for 2-3 hours (until cold).
