Strawberry Jello with Rose Whipped Cream is a representation of my lifestyle. Kinda.

Contrary to what you may believe from my previous recipes, I am really health conscious. That phrase “Everything in Moderation” is an absolute key to my way of life.

Here are a random things about my life…

  • There is usually fruit is my desserts (Like here or here).
  • At times I take my multi-vitamin with a soda (Usually diet).
  • I go to the gym 5-6 times a week to justify the stagnant hours I spend on Netflix.
  • I spend hours planning, preparing, photographing and writing followed by hours of…nothing. Just straight laziness.

Not perfect…but still kind of balanced.

Strawberry Jello with Rose Whipped Cream

So what does that have to do with this recipe? This dessert is one that I’ve made over 50 times (no exaggeration). I eat this on a daily basis when I’m “dieting” in a caloric deficit. It’s so filling and super low on calories (I used sugar-free). Really simple and easy, it is just strawberries suspended in a pool of strawberry jell-o. I’m sure you can already picture what this taste like. Fresh, sweet, slightly tart and oh so very juicy.

Where does the balance come in? Well my inquisitive viewer…I topped this jello with aerated fat and sugar (AKA whipped cream). More accurately, it’s rose scented whipped cream! That’s right! Roses are not only gorgeous to look at and pleasant to smell but they also provide an amazingly sophisticated flavor. Plus, I am 98.13875% sure that your crush would choose this over a real rose.

I made this recipe as a healthier alternative to my other Valentines day recipes. I don’t say this much but…this healthier option is holding it’s ground against the more impressive, decadent, suspenseful and even chocolaty recipes I put out this year. My recipes are my babies and I know I shouldn’t have a favorite but let’s be honest for a second. If you are a parent with more than one child…then you have a favorite…you just can’t voice it. Well, this dessert…is…my…um…it’s up there.

Ingredients
Jell-o
Rose Whipped Cream

Instructions
  1. Boil the water and dissolve your jell-o in it. Set aside to cool.
  2. Wash the strawberries, cut off the tops and quarter them (cut the bigger berries into 1/6). Save a few for garnishing.
  3. Fill your containers close to the top with the berries.
  4. Pour the (room temperature) jell-o in the containers, cover and refrigerate.
  5. Whip the heavy cream to soft peaks. Add the powdered sugar, rose water and whip until you have stiff peaks. cover and refrigerate until you are ready to use.
Recipe Notes

I used three small boxes of Jell-O (.30 oz each). You can always use one big one and one small one.
